Best Damn Cookie
I love to bake. My mom was an excellent baker, everything she made was delicious. So when I entered the world of baking with cannabis, I wanted to make the best tasting cookies. While there were a few fails (Blondies), generally everything I have experimented with has been successful. But my most favorite and popular cookie is a simple Tollhouse Chocolate Chip Cookie. Besides being super easy to make, they taste amazing and hit even better!
I do have a method to my madness when it comes to my recipes. Being consistent with how these are dosed is probably the hardest part of baking with cannabis. For me, in the beginning it was much harder. I was using dispensary flower which wasn’t ideal but it worked. Now that I grow my own, I can experiment without feeling guilty if I screw up. Yes, I have ruined an ounce or two in the decarb process (using the Magic Butter Decarb Box… not a fan). I prefer a cookie sheet. It works best for me. Sure my house smells but who cares!
Once my flower is decarbed, I use my Magic Butter Machine, one ounce of flower to 4 sticks of unsalted butter. I use bud and trim because I can. Why not, I certainly cannot smoke all the flower I grow! My last plant was blueberry, huge and beautiful (maybe some blueberry muffins in the future?)
Once I have my butter made, then the fun begins. Using my Kitchen Aid mIxer (a gift from my daughter) I use one stick of cannabutter (114g) and make the recipe as though it was regular butter. The Kitchen Aid does all the work, making sure the butter is infused nicely with the sugars, vanilla and egg. Then add in the flour, and other ingredients. Last comes the chocolate chips. The secret to making the cookies crisp on the outside but chewy on the inside it to refrigerate them for at least an hour once the batter is made. This way the cookies don’t spread when baking. My process is to weigh each cookie before baking. So once my dough is completed, I make my cookie balls and then refrigerate. Each ball weighs between 22 and 24 mg. This seems to be the magic number for a cookie that is about 40mg of THC. Sometimes they are a stronger, depending on the strain of flower I use. But generally, they are about that amount. I do the same with my fudge, brownies and salted caramel fudge. I weigh everything before baking (or in the case of brownies and fudge, after it is cooled).
So far this method works for me. And I have had no complaints by those whom I have shared my baked goods with. I am very lucky to have found a hobby that brings joy to others as well as myself. I am in my happy place when I am baking. Life is good, time to go eat a cookie.
